Considered a marriage of breakfast and lunch and served late morning until early afternoon, brunch menus feature both sweet and savory dishes, and almost always include champagne or a cocktail. And while it’s fun to gather with friends at a cozy, local restaurant for brunch, making a delicious spread at home is equally fabulous. And wait until you see my mouth-watering, stress-free, versatile brunch offerings in this class!
We start with Georgian Cheese Bread, cheese-filled pizza dough that’s baked until gooey and topped with fresh eggs. There are three cheeses in the filling, so it’s ultra-decadent. To serve, you simply tear off pieces of the chewy-crisp bread and dunk it in the melted cheese and perfectly baked eggs. It’s the most magical dining experience ever. Plus, you’ll totally wow your friends and family! Next, we’ll whip up Couscous with Mayo-Roasted Asparagus. This dish features puffy pearls of couscous, scented with lemon, olive oil, and herbs, then tossed with caramelized, mayo-laced roasted asparagus. The asparagus alone will blow your mind. This dish it simple, unique, and great served warm, room temperature, or chilled. Next, we shift to something sweet with my amazing Banana Cookies. Imagine marrying banana bread and chocolate chip cookies; these gems are puffed up and moist in the center, and golden-crisp around the edges, just as any respectable cookie should be. Plus, there are juicy bits of banana in every bite! We’re back to savory in the next recipe with Ham and Cheddar Filo Cups. Envision ham and cheese quiche baked in crispy, flaky filo cups. The ham is smoky, the cheese is melty, and the moist eggs hold everything together. They’re super easy to prepare, wildly versatile, and fun for people of all ages. You will love the next recipe – Grilled Avocados with Poached Eggs. If you haven’t grilled avocados before, now’s your chance! The avocado flesh chars slightly from the grill marks, which creates a wonderful smoky quality. Add a little taco seasoning, perfectly poached eggs, and some Mexican cheese and you’re ready to serve. We’ll finish off the class with my favorite cocktail, the Cosmo Screw. This commingling of the Cosmopolitan and Screwdriver is colorful and refreshing, and a nice alternative to the more traditional offerings (Bloody Mary, Mimosa, and Irish Coffee).
