Jelly roll cakes or “Roulades” are thinly baked cakes that are filled and rolled and sometimes iced on the outside. They can be made in a multitude of flavor combinations fitting for any time of year. While these cakes have been around for many, many years, they recently had a style update by adding patterns and colors to the outside of this baked treat.

Rachael starts by discussing some design inspiration and showing you how to prepare the sheet pan for a perfect cake release. Then whip up the base batter, color up the piping batter, and start decorating! She’ll teach you how to pipe a multilayered design and how to set the pattern so the design comes out clean on the outside of your roll. Once the roll is baked and cooled you’ll learn how to fill the cake with a creamy vanilla mouse and roll up this gorgeous dessert that is so light it melts in your mouth.
