Overview

Throughout this course, "Introduction to Nutrition Policy, Frameworks, and Process," learners will gain a comprehensive understanding of the essential components of U.S. nutrition policy. Over four modules, the course covers the foundations of the food system and food environment, nutrition policy formulation, and the policy evaluation process. Participants will explore frameworks that promote nutrition equity, including the social determinants of health and key policy initiatives such as the Healthy People Initiative and NOURISH. The course also delves into the nutrition policy process, from problem identification to policy implementation, and examines the evaluation and prioritization of nutrition policies. Through engaging video lectures, readings, and quizzes, this course equips learners with the knowledge and skills to effectively understand and influence U.S. nutrition policy. This course primarily aims at learners with a beginner-level understanding of U.S. nutrition policy. This course is part of the College of ACES suite of online programs, including the graduate-level certificate, "Food Regulations, Nutrition Policy, and Personalized Nutrition," that can be stacked toward a master's degree. Syllabus

  • Orientation & Module 1 | Overview of Nutrition Policy
    • You will become familiar with the course, your classmates, and our learning environment. The orientation will also help you obtain the technical skills required for the course. In Module 1, learners will explore the basics of food and nutrition security, the food system, and the food environment. They will also learn about the definition and codification of nutrition policy, including its goals and types. This module provides a foundational understanding essential for advancing in the course.
  • Module 2 | Nutrition Policy Frameworks for Nutrition Equity
    • In Module 2, learners will delve into the social determinants of health and their impact on nutrition equity. They will explore various policy frameworks and the Dietary Guidelines for Americans. This module equips learners with the knowledge to address health disparities and promote equitable nutrition policies.
  • Module 3 | Nutrition Policy Process
    • In Module 3, learners will understand and describe the steps involved in the nutrition policy process. Learners will explore the stages from problem identification to policy implementation. This module provides a detailed look at how nutrition policies are developed and enacted.
  • Module 4 | Nutrition Policy Evaluation and Priorities & Conclusion
    • In Module 4, learners will explore the importance of policy evaluation and the key priorities in policymaking. You will also learn about organizations that work to reform nutrition policy. This module concludes the course by equipping learners with the tools to evaluate and prioritize effective nutrition policies.
